Egg in a Basket (two ways)
This almost ended up being the egg in the wastebasket. Instead of taking enough time to prepare this lovely breakfast I rushed and used a shortcut. The eggs didn’t cook fast enough (and I haaaate runny eggs) so I thought to broil them just for a sec. Then I got distracted for a second (which happens often at my age) and my bread got burned. Gah! Hate when that happens. I wish I had a helper to take photos of the process for me. Or clean up. Wait, who am I kidding? My favorite phrase is GET OUT OF MY KITCHEN!
Anyhow, for some good reason the eggs didn’t cook evenly in the oven. So, Hubs got served the runny one, which he likes. And the burned side of the bread wasn’t bitter as I expected thanks to the sausage mix. Otherwise, this is a really good meal. I adapted this recipe from an old issue of Midwest Living magazine. I think next time I’ll leave out the mushrooms. I couldn’t even tell they were in there so why bother.
A simpler way to make an egg in a basket is to leave out the sausage mixture and just bake the egg in a hole. Make the hole heart-shaped and you'll earn extra points for serving a fancy breakfast on Valentine's Day or any day. Just because.

Ingredients:
Serves 2
- 2 pork sausage patties
- 2 eggs
- ¼ cup fresh mushrooms, finely chopped
- ¼ cup bell pepper, finely chopped (any color)
- ¼ cup green onions, thinly sliced
- ½ cup shredded Cheddar cheese
- 2 slices Home Style or Texas toast bread
- 2 teaspoons butter
- Salt and ground black pepper
Directions:
- With a 2-inch round cookie cutter or a small juice glass, cut out the center of each bread slice. Spread both sides of the bread slices with the butter. Set aside.
- In a large skillet, cook sausage patties, mushrooms, pepper, and onions until meat is brown and vegetables are tender, stirring to break up sausage as it cooks. Remove sausage mixture from the skillet; drain.
- In a small bowl combine sausage mixture and cheese; set aside and keep warm. Carefully wipe skillet clean with paper towels.
- In the same skillet, toast bread on one side over medium heat about 2 minutes or until golden brown. Reduce heat to medium-low. Turn the bread slices over.
- Break one of the eggs into a small measuring cup with a handle or a small bowl. Holding the lip of the cup as close to the bread as possible, carefully slide the egg into the hole. Repeat with the other egg and bread slice. Lightly sprinkle the eggs with salt and ground pepper.
- Cook, covered for 10-15 minutes or until eggs are firm to your likeness. Transfer the slices to your serving plates. Spoon sausage mixture atop bread slices, avoiding the egg as much as possible.
- Spread the cutout heart with strawberry jelly.
- Serve with fresh fruit, more shredded cheese or hot sauce, if you like.

I make “egg in a hole” more simply. I melt margarine the the frying pan, coat both sides of the bread, rip out a hole in the bread center and eat the buttery goodness, then break the egg into the hole, and cook on low heat. A slice of cheese on the top after it is flipped is good, too. This was Dennis Wilson’s,( Beach Boys drummer), favorite breakfast. So I have been making this since I was a teenager (now 66) and an avid reader of fan magazines!
