Preheat oven broiler on high. Combine honey and mustard. Season with salt and pepper.
Arrange salmon on a greased baking sheet, skin side down. Drizzle salmon with olive oil (about 1 ½ tablespoons) and season with salt and pepper. Brush generously a coating of the glaze on top.
Cook for 5 to 8 minutes or until the top is crispy and salmon is cooked. Remove from the oven and drizzle with more olive oil. Serve hot. Bon appétit!
