1cupshredded unsweetened coconutplus more for rolling
2tablespoons coconut oil
2 ½cupsdatespitted
1tablespoonvanilla extract
2tablespoonsmilled flaxseedoptional
Instructions
Combine almonds and coconut in a food processor until crumbly.
Add the oil, dates, vanilla, and flaxseed if using and process again until mixture holds together.
Using half a tablespoon measure, spoon out mixture and roll between your hands to form balls.
Coat each ball in the remaining coconut.
Store refrigerated in an airtight container or a plastic bag for up to a week.
Notes
~ Free Tip ~ Substitute almonds with cashews, pecans, or walnuts. Add cinnamon or orange zest to the mixture. Roll them in cocoa powder for a hint of chocolate. You can use butter instead of coconut oil for a non-vegan version.
