Ingredients:
01Cook the onions, garlic, ground lamb, and spices.
02Stir in the crushed tomatoes and pine nuts.
03Arrange the eggplant halves in a baking dish. Brush with oil and bake at 425 F for 20 min.
04Spoon the lamb mixture onto the eggplants in the baking dish.
05Cover the dish with foil and bake at 350 F for about 30-40 minutes.
06Sprinkle with reserved pine nuts and garnish with parsley.
