You know how you crave sweets but don't want all the calories that come with it? These easy, no-bake energy bites are vegan and paleo and you can eat them without the guilt because there's no sugar added. But, they do offer a healthy dose of fat and fiber.
Somewhere mid-January I stopped following through with my NY resolution of losing weight and started closely watching my figure ... grow. Every time there's a dessert in front of me I'd tell myself I'll start my diet tomorrow.
Fifteen additional pounds later and I'm looking for a healthy alternative.
These energy bites are delicious, good for you, and super easy to make. I used everything I already had on hand: leftover almonds from a mixed nuts jar (apparently nobody eats almonds), coconut, and dates.
Don't you keep dates in your pantry? You should. Try them with tahini sauce, it's to die for (from excess weight, ha).
And although these yummy bites are sitting in my fridge, as I'm writing this my husband brings me some apple pie with vanilla ice cream. "You need some energy." My energy is in the fridge, duh!
But I can't blame him for sabotaging my attempt to lose weight as I have no self-discipline. I ate the darn pie while muttering something under my breath. No wonder I've got 15 pounds to lose.
Ingredients:
- unsalted almonds
- shredded unsweetened coconut
- coconut oil
- pitted dates
- vanilla extract
- milled flaxseed (optional)
Directions:
- Combine almonds and coconut in a food processor until crumbly.
- Add the oil, dates, vanilla, and flaxseed if using and process again until mixture holds together.
- Using half a tablespoon measure, spoon out mixture and roll between your hands to form balls.
- Coat each ball in the remaining coconut.
- Store refrigerated in an airtight container or a plastic bag for up to a week.
