Put the lime in the coconut...although this might be the silliest song I've heard, those two flavors are a match made in heaven! These easy to make coconut lime ice cream bars taste like the sunset on a Caribbean beach. They're seriously magical and soul rejuvenating.
And since I won't be going back to the Bahamas anytime soon, these are the next best thing. Especially, that they are no-churn and you don't need an ice cream machine. In fact, I think I make ice creams more often than I would if I had the machine.
What's to love about these coconut lime ice cream bars?
I like easy cleaning and having fewer kitchen gadgets makes it pretty easy to clean. If you've ever cleaned a juicer, food processor, something or other-maker you'll know what I mean. The only gadget you'll get dirty for this ice cream is a whisk. I can deal with that.
Whisk the few ingredients in a bowl, pour into Popsicle molds and freeze. It's that easy. By the way, when I told my husband I made popsicles he said only because I used the molds doesn't make them popsicles. Hence the ice cream bars. Sometimes I listen to him. But I honestly don't know the difference.
So, whether you decide to use the molds or freeze it as is and then scoop it out you should definitely make this refreshing treat because you're going to love it.

What do I need for this tropical ice cream?
You'll need only three basic ingredients for these bars and no ice cream machine or an electric mixer. Depending on your ice pops molds, you'll get 4-6 servings.
- Sweetened condensed milk
- Coconut milk
- Lime - juice and zest
- Coconut extract and shredded coconut- to intensify coconut flavor (optional)
How do I make coconut lime ice cream bars?
You will love how easy this is:
- In a mixing bowl, whisk together condensed and coconut milk.
- Next, add lime zest and juice to the mixture and stir. Add extract and coconut if using.
- Pour into popsicle molds or a container.
- Freeze for 4 to 5 hours or overnight before serving.
