Put the lime in the coconut...although this might be the silliest song I've heard, those two flavors are a match made in heaven! These easy to make coconut lime ice cream bars taste like the sunset on a Caribbean beach. They're seriously magical and soul rejuvenating.
And since I won't be going back to the Bahamas anytime soon, these are the next best thing. Especially, that they are no-churn and you don't need an ice cream machine. In fact, I think I make ice creams more often than I would if I had the machine.
What's to love about these coconut lime ice cream bars?
I like easy cleaning and having fewer kitchen gadgets makes it pretty easy to clean. If you've ever cleaned a juicer, food processor, something or other-maker you'll know what I mean. The only gadget you'll get dirty for this ice cream is a whisk. I can deal with that.
Whisk the few ingredients in a bowl, pour into Popsicle molds and freeze. It's that easy. By the way, when I told my husband I made popsicles he said only because I used the molds doesn't make them popsicles. Hence the ice cream bars. Sometimes I listen to him. But I honestly don't know the difference.
So, whether you decide to use the molds or freeze it as is and then scoop it out you should definitely make this refreshing treat because you're going to love it.
If you want a lighter version, such as dairy-free coconut lime ice cream bars, here's a good recipe I found at The Feed Feed.
I need to learn how to take quick photos or learn to be happy with the ones I take. These were seriously starting to melt on me (well, not literally on me...you know what I mean).
Oh, and sorry if you got that song stuck in your head. Put the lime in the coconut... 😛

Wow...your recipe makes me feel like I can actually make ice cream. I love the combination of flavors. Not too sweet and a little tangy. Thank you for sharing with #blogginggrandmotherslinkparty. We greatly appreciate your participation and I have shared on social media.

Yes, you can!!! 😀

Yummy, yummy! I'm not usually a big fan of coconut but I do have my moments. With lime, it looks terribly refreshing. 🙂 muuuaaackks.
Jas says
Really? I'd think you'd use it in cooking all the time. Little do I know 🙂
Neesie says
They look delicious but I'm not such a huge fan of coconut...do you have a suggestion of an alternative?
Thanks for sharing 😀
Jas says
Hmm, haven't thought of substituting it but I like a challenge. Maybe chocolate milk instead of coconut milk but omit lime. If you'd like to keep lime, it pairs well with berries and ginger. Dilute condensed milk with regular milk. Or go for margarita ice cream I have linked to in the post 🙂

They look so refreshing! And the popsicle comment from your husband sounds like something mine would say too. It's on a stick, that counts right? Though I'd rather have an ice cream bar anyway, so jut pass one my way if you don't mind!
Jas says
Haha, what's important is that they're delicious no matter what you call them, right? 😉
Michelle says
You know what Jas, it's freezing outside right now and I honestly don't care, coz we are so going to have some of these popsicles today.
Jas says
Freezing? It's hard to imagine freezing temps in South Afrika and also that you have winter now. It blows my mind every time, lol. You'd never survive our winters where we can get heavy snowstorms with -21C. So, your minimum 4C is a piece of cake for me, lol. But it's all relative, so let's pack the bags and go to hot Greece! But only if you promise we can visit you when we have winter 😉 😀

These look so delicious! I adore lime and basically anything frozen. I don't think these would last more than two days at home!
Jas says
Same here, lol. But I gotta warn you - it's really rich!
Roseann Hampton says
These look delicious! Is the coconut milk you used the canned variety or the type sold in the alternative milk section?
Jas says
I used canned, but am sure any would work 🙂 Thanks for stopping in!
