Want to have your cake and eat it too? This gluten-free strawberry oatmeal cake is light and refreshing. It's perfect for dessert or an afternoon snack. Fruit and oatmeal qualify as breakfast, amiright? So it's OK to have a slice with your morning coffee! ๐
If you're not a big fan of oatmeal this recipe will change your mind, because it's delicious and the texture is fantastic! I don't like mushy, bland oatmeal breakfast recipes either.
But the benefit of living in different countries is that you get exposed to their culture as well as their cuisine. Germans love oatmeal and I love how innovative they are in using it. Have you ever thought of adding oatmeal to your salad? Just wait for that recipe. It's mind-blowing!
For this strawberry oatmeal cake, I used Flahavan's oatmeal. They were so lovely to send me some samples but I'm also partial to family-owned good quality, non-GMO products. You can really tell the difference in taste.
My Bavarian apple oatmeal cheesecake and Swedish apple oatmeal pie are still talked about. That's what I call the everlasting flavor.
Not only is this German oatmeal cake super delicious and moist, but it's gluten-free, dairy-free, eggless, and if you're counting Weight Watchers points, it is only 5. if you want to keep this cake vegan, substitute jello with cornstarch or agar.
Ingredients:
- apples (like Honeycrisp)
- Flahavan's oatmeal oats
- baking powder
- white or coconut palm sugar
- cinnamon
- vanilla extract
- fresh rosemary (optional)
- fresh strawberries
- sugar-free strawberry-flavored jello
Directions:
- Preheat oven to 350 degrees Fahrenheit.
- Mix oatmeal with grated apples, water, baking powder, and sugar. Stir in cinnamon, vanilla, and rosemary if using.
- Pour the dough into a 9-inch springform lined with parchment or wax paper. Bake on a middle rack for about 30-40 minutes. Let the cake cool down.
- Halve the strawberries and place them on the top of the cake.
- Prepare the jello in accordance with the instructions on the package. Refrigerate until it's almost set but pourable, about an hour.
- Slowly pour the jello over the strawberries. Return to the refrigerator for at least two hours.
- Run the knife around the edge of the cake to loosen. Remove the side of the springform.
- Serve with whipped cream if you're not watching the calories.
